Pumpkin or Butternut muffins

Ingredients

400g pumpkin or butternut squash

300g flour

170ml olive oil

400g sugar

3 eggs

Pinch of salt

2 teaspoons of baking powder

1 teaspoon of cinnamon

seeds, chocolate or nuts of your choice

 

lets’ spice up your fall season with some homemade pumpkin muffins recipe! The perfect treat for all mornings as breakfast or a snack. Healthy, easy and delicious for you and your family to enjoy during fall season.

Method

Start by blend the pumpkin or butternut squash then add the sugar, eggs and the olive oil . Next, combine the remaining ingredients in a bowl until are combined. Fill your muffin silicon about ¾ of the way full. You can add seeds, chocolate or nuts in your muffins. Place the in a preheated oven at 180c the over for about 25 minutes. You can check if they are cooked by sticking a knife right into one of the muffins if it comes out clean, they’re done. If it’s a bit sticky, put them back into the oven for a little longer. When you remove them from the oven leave the muffins to cool on a wire rack. Enjoy
