Harvest Quinoa Salad

The hearty quinoa provides a satisfying base, while the roasted butternut squash adds a comforting sweetness. Dried blueberries bring a pop of tartness, you can also add chopped kale provides a fresh, earthy crunch. Ingredients

A cup of Quinoa

Roasted butternut squash

Handful dried blueberries

Chopped kale

Handful walnuts

Crumbled feta cheese

Olive Oil

Salt

 

Method

Cook quinoa according to the package instructions and allow it to cool while you roast the butternut squash at the same time. You can also add some kale. Slightly toast the kale and the walnuts. In a large bowl, combine the quinoa, roasted butternut squash, dried blueberries and toasted kale and walnuts.

Sprinkle the crumbled feta cheese over the top. Drizzle with olive oil and toss until all the ingredients are beautifully coated.
