Brussels Sprouts and Pomegranate Salad
Ingredients
A big bowl brussels sprouts
Handful pomegranate
Handful almonds
Parmesan cheese
Lemon
Dijon mustard
Olive Oil
Salt
Method
Begin by finely shredding Brussels sprouts and roast them for a few minutes same as the toasted almonds. In a plate, toss together the Brussels sprouts, pomegranate, toasted almonds, and Parmesan cheese. In a small bowl add the lemon, dijon mustard and olive oil whisk together and drizzle the dressing over the salad and toss to combine.
