How to bake a ‘‘Vegan Winter Cake’’ or ‘‘Fanouropita’’

Ingredients

1 Cup olive oil

1 Cup orange juice

1 Cup sugar

1 Teaspoon cinnamon

½ Teaspoon clove

2 Cups flour for all purpose

1 Teaspoons baking powder Raisins

 

A cake with a story behind. Our Winter Vegan Cake or else ‘’Fanouropita’’ is a delicious Greek cake recipe that is traditionally served as a Lenten cake, also known as "The Lost and Found Cake." On August 27, it is usually offered as a blessing to Greek Orthodox believers on St. Fanourios Memorial Day. Fanouropita is made with oil and has no butter or eggs, making it suitable for holy fasting days and vegans. Believers donate the cake in the hopes of receiving "revelations" about objects, people, or finding something they seek. Greece is known for its varied customs, but one that stands out is the celebration in honor of Saint Fanourios. Baking a dessert in honor of the most famous patron saint of lost goods.

 

Method

Place the first 5 ingredients (olive oil, orange juice,cup of sugar, cinnamon and the clove) on a mixer or blender at high speed. Add the baking soda and baking powder into the flour. Then mix the two together until it becomes a dough. Place them in a pan and bake at 170C for about an hour, until golden browned. You can finish by sprinkling some icing sugar. Recipe
