Fasolakia, Green bean stew

Wellcome to a new cooking series where we learn to cook Original Greek Recepies. Today we have a classic Greek recipe Fasolakia! Green bean stew, one of the favorite summer dish that belongs to the category of ‘’Ladera’’ meaning it is cooked in olive oil. It is usually eaten as a main course with feta cheese and bread. Not only is delicious but it is also vegan and gluten free, rich in vitamins, fibers, antioxidants and good fat. Have I forgot to mention are easy to make!

Ingredients

1k Green beans fresh or frozen

¾ of a cup olive oil

1 onion chopped

500 ml tomato juice  

A pinch of salt

Method

Starting by washing the green beans. Pouring the olive oil into the pot and sautéing the chopped onions, then adding the green beans and potatoes. Then add the tomato juice. Stir the green beans and allow them to slowly cook for about 30 minutes until the vegetables are nice and tender. Serve the green beans stew, fasolakia warm or at room temperature with some feta cheese and bread! Kali Oreksi! Enjoy!
