Christmas Gingerbread Cookies
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon glove
2 teaspoon ginger
1/2 cup granulated sugar
210g butter
Icing
2 tablespoons icing sugar
2-3 teaspoons milk, water or lemon juice
If your icing to be shiny you can add some corn syrup
Assorted candies, sprinkles or colored sugars for decorating (optional)
Method
In large bowl add the flour, baking soda and the spices. In a small pan melt the butter and sugar in a low heat until the sugar dissolves and add it to the dry ingredients bowl combine together until it forms a dough. Refrigerate overnight or freeze for 30 minutes until the dough is firm. Flour the area that you are going to roll the dough, you can also flour the cookie cutter you are going to use so the dough doesn’t stick to it, cut the shapes that you like with your cookie cutters. Add a baking sheet to your pan and transfer the cookies carefully. Bake in a preheated oven at 120 degrees for about 10 to 20 minutes depending on the size until are slightly golden. Let them cool completely so you can ice them if you wish. For the icing you are going to add to a bowl the icing sugar and milk, water or lemon juice if is too thick add more liquid if is to thin add more sugar. Use a piping bad to add the icing cut a small opening and let your creativity run wild add sprinkles or coloured icing for your decoration. Let the icing harden and you are done! Enjoy!
